Cranberry Salsa

I am NOT a cranberry sauce fan.

This is my take on this side dish that I am sure you will LOVE!

Ingredients

  • 1/4 cup red onion chopped
  • 1 TBLS chopped jalepeno
  • 2 plut TBSP chopped cilantro
  • 12 ounce bag whole cranberries
  • 1 cup whole dried cranberries
  • 2 TBSP Lime Juice-fresh squeezed
  • 2-4 TBSP Raw Honey(taste preference)
  • 1/4 tsp cinnamon
  • 1 tsp salt
  •  

In a food processor combine red onion, jalepeno, and cilantro. Pulse until finely chopped.  Add the fresh and dried cranberries, then pulse again until coarsely chopped.

In a large bowl whisk together lime juice, honey, salt.  Add cranberry mixture and toss well. 

Now in my house, my daughter is my taste tester to make sure we have the right ratio of spicy to sweet.  sometimes we have to add more lime juice, or more jalepenos, or cilantro.  that is where your own palate comes into play-but this is the best accompaniment to the turkey and sweet potatoes!
